Dried, ground black pepper is one of the most common spices in Western cuisine. Usually referred to simply as “pepper”. Their flavour is spicy, biting, and extremely strong; their scent is piercing and aromatic. Up to 3% of essential oil found in ground black pepper possesses the fragrant flavour of capsicum peppers but none of the pungency.
